Chilled proteins with a pinch of salt we begin to whip at medium speed until a foam is formed, then add sugar in a spoon and whip the mixture to a lush, thick mass.

The whipped proteins are evenly distributed over the parchment into a layer of about 1 cm thick, I used a pastry bag, sprinkle chopped nuts on top, I have pistachios. We send to the oven preheated to 165C for 25 minutes.

Distribute the cream evenly, leave a little for decoration, lay the berries on top and roll up the roll.

I decorated the top with cream residues and berries, sent to the refrigerator for 1 hour.
