- wash the eggplants and wipe them, cut them in half lengthwise and dig out the inside. We cut the middle into small cubes.

- Peel and finely chop the onion, bell pepper, and add the grated carrot and diced tomato. In a large frying pan, heat with olive oil, adding the finely chopped eggplant. Smoked sausage cut into cubes (or you can use bacon / ham / minced meat - I had sausage in the fridge). And add it to the pan with vegetables. Bake for about 10 minutes.
